Rabbit is delicious. As for slave recipes passed through generations, poor white Southerners ate the same foods as the slaves. Corn, greens, yams, etc., were grown behind white tenant farm shacks as well as slave quarters. Recipes I cook now came from my mother, grandmothers, and great grandmammas. Oral tradition is still passed down now as it was in the time of slaves. I try to pass a story from the past about our family whenever we have family meals. I have told stories about hog killings and how the entire carcass gets used for food. The old saying was "We eat everything but the oink."

Fred shot a couple of jackrabbits back in the early 80's at the ranch and purposed to prepare them for consumption. He says he could've eaten shoe leather that was more tender.
