I got me some tur-maters and oak-rah to doctor up my gumbo so I'll be postin some more cheesey pics in a few hours ..... And then we can watch the MANY faces of Jeff kumm through like a reckin ball and f-word my thread up SOOOOO, here I am doctoring up my brown Cajun style gumbo with maters, oh kree and more chicken stock which will NOW semi-convert it to creole style ..... I Cheated ALL THE WAY and bought canned goods Here you can see that things are about to change and soon a new sheriff in town NOW, I continued adding chicken stock until I got the right thickness....The 1 cup flour and veggie oil (equal parts) RUE that i started the gumbo with still had this baby a tad too thick from last night...Once i thinned it out correctly, I added more sausage, a blast of OLD BAYS seasoning and brought it to a nice low rolling boil for about 20 minutes....The deapth of the flavor was OUTSTANDING !!!! I took half of it and put it in the freezer...This turned out VERY well despite my rookie skills ..... NEXT UP WILL BE CHILI !!!!!! Maybe by mid week

I always preferred jambalaya to gumbo. Lots of hot spicy sausage, chicken, some venison if you gots some ........... Tobasco and Tony Chachere's if you need even more kick ............... YUMMMMMMMMMMMMM!!

Fellas,
IMO, cooking is a lot like musical ensembles. You need the right ingredients, and they have to taste good when combined. Tres Bien Ensemble.
As an example, when I do a multi-track recording with, say, bass, drums, guitars, organ, vocals, etc., the final product is only good if ALL of the individual tracks are good, and fit with each other. If a particular guitar track is bad, I can't fix it by adding other tracks-- it would be like trying to make a tasty stew with a rotten piece of meat.

Two things, Lee. First, is that "rue" is what you do when you burn your roux. Second, gumbo is a stew made with okra. If it doesn't have okra, it's stew, but it isn't gumbo. My friends in New Orleans would disown me if I ever fed them a gumbo without okra.
Other than that...nicely done. I like the Zat's, although I prefer to spice from scratch. Sometime if you'd like a little change-up on your gumbo recipe, instead of the Zat's, use Chesapeake Bay or Old Bay crab spice with a little file'. File' can be a little tough to find, but it's an important part of gumbo.

Blue Bunny is one of my favorite brands. Try some vanilla with chopped walnuts and dark chocolate shavings on top and Amaretto drizzled all over. Hmm...come to think of it, I'll bet that'd work well on that "Whopper" ice cream too.....

Flatus, Are you hitting the blue drinks again today? I posted that comment comparing cooking to musical ensembles precisely because PA5 said he can't cook.
