Sauteing onions and celery until translucent. Next in is the garlic and carrots to make the mire poix. I'll post a pic of the finished product.

Ok, one more pic with the zucchini, squash, kale, green beans, crushed tomatoes, diced tomatoes, and one carton of chicken broth added. Not in yet: spinach, pasta, herbs, kidney beans, the rest of the chicken broth, salt and pepper.

Ok, I lied. One more pic simmering away. I decided to add a can of garbanzos. Only thing left to add is the spinach and fresh grated parmesan cheese. Din-din is nearly ready! Big batch - that's a 12 quart Calphalon pot. The same pot I make my chili and bean soups in.

I have an extensive herb garden and I'm quite interested in different variations.
