Well I have to tell you that I have been told I MUST make this for my youngest son on his birthday every year. Basically its like a taco cake. Read the entire recipe before you start. Southwestern Cheesecake - Bake @350 This is made in a 9" cheesecake pan 1 1/2 Cups crushed Tortilla chips 5 T. melted butter Mix together and line the bottom of the pan only with it. Bake that for 15 minutes.  Then: Beat 16 oz of softened cream cheese 2 eggs 3/4 T. cumin 3/4 T chili powder 1/4 teas. oregano Than add (hand mix in) 2 Cups of Cheddar cheese, 1 sm can of green chilies, chopped and drained Stir this well and layer on the crushed chip mixture.  Meanwhile, brown 1 lb. of beef and add to one can of refried beans. (not Freds mondo shopping style), mix well. Layer this on top of the cheese mixture.  Bake for 30 minutes. If you want you can eat this dish hot or cold. Its a meal or snack.  Let it cool a bit, then: Top with sour cream, diced tomatoes and chopped green onion. If you want it cold, let it chill in the fridge for 3 hours.  |

Hmmmmmm Interesting. My wife makes a mexican lasagna similiar to that. Same ingredients just layered and baked.

This last time when I made it, I only got one piece. My 2 sons devoured most of it and took the last lone piece home. I do need to get a bigger cheesecake pan. Either that or figure out how to hide a piece when they are not looking.

For a quicker party fix, I put refried beans, 1 jar of salsa and 3/4 of a pound of shredded cheese in a microwave bowl. Stir and then add more cheese on top. Heat well in microwave, about 3-5 min. Depending on power. Serve at bonfire with tortilla chips to friends. Add Beer or Margaritas and its a party. Yeah, my kids loved it when they were teens.

WHAT does a neighbor's lawn look like that hasn't been mowed since last fall and I've had to mow mine 4 times already this year ? Glad you asked  ...there are places that are easily 3' foot tall...He's trying to mow it right now with a push mower....LMFAO !!!!  |
