Three half racks of babybacks dryrubbed with Stubb's and will be hit with Sweet Baby Ray's near the end. I'm in letter writing mode as well.

The ribs came out super tasty. What kind of ribs are those, flotus? Walmart kitchen? They started life as a full rack of spare ribs.....it's like a bigger baby back thingy.....I've been usin yer and cyber's and Rufus's advice about cookin them in aluminum tent for 2 hours @ 300F and then finish them on the grill at high heat and slatherin them with sauce....In THIS case, I had some Italian salad dressing layin around so I marinated half the rack over night and cooked them tonight....I used a KC Masterpiece Kansas city sauce and they came out SUPER tender right off the bone (probably due to the salad dressing)....Still, I think the Italian salad dressing would have been a better fit with a Carolina based vinager sauce.....I'll try it next time....

I took mine straight out of the Costco 3 rack pack, cut them into 6 half racks, seal-a-meal'd 3 and put 3 in the smoker with Stubb's rub. Open grill. Flipped at the 1-1/2 hour mark. Slathered in Sweet Baby Ray's at the 3 hour mark. Flipped at 3:15 and slathered the other side. Pulled off the smoker at the 3-1/2 hours. Perfection. Simple with no fuss, no muss, no apple juice, no oven, no foil. They came off the bone CLEAN AS A WHISTLE and all the fat had cooked off. Nothing left but bodaciously tasty babyback rib meat in sauce/smoke flavor/doneness perfection. You shoulda been here my friend.
