I've been reading about the bush meat markets in the ebola infested countries of Africa. The governments have been broadcasting on radio the dangers of bush meat infecting people with ebola and other diseases. (Bush meat is anything you catch or kill. It's sold in open markets.) One woman, a bush meat seller, laments the loss of business. She states her main source of income is selling grass cutter rats. Normally these rats are caught, but she knows hers are safe because she raises them on her farm. They sell well because they taste like chicken. Okay, dumb question part. If I have a choice between raising rats or chickens to eat, why in hell would I choose rats? If nothing else comes to mind, with chickens I could at least have a side business of eggs, I think. Why would anyone choose to raise and market rats for food?

I thought about it and I believe the answer is obvious. She raises rats because it's easier than raising lawyers, but she does get more emotionally attached to the rats.

PLUS, Chickens normally carry salmonella ...Nasty all by itself....Think about it.... Free range chickens are cleaner than those raised in cages. The caged chickens are the ones that tend to carry salmonella because of the containment in their own feces. But to raise chickens in Africa, I would think would be a challenge in itself because it would attract more wild animals to the area. Our neighbor on the hill in NY lost most all of her chickens and ducks to fox's and hawks. I can only imagine fending off big cats, hyena's and other varmints.
