Everything's in the crock for 6-8, then yum-yum!! 2 lb ground deer (plain, not chorizo grind) 1 BIG Vidalia onion (sweet onion) chopped 6 cloves garlic, chopped 2 BIG bell peppers, chopped 1 jalapeno, minced 2 tsp cumin 2 tblsp chili powder 2 tblsp vegetable oil 2 cans peeled, diced tomatoes 2 8oz tomato paste 1 can long green chilis, diced 1 can kidney beans 1 can black beans 1 Yeungling Lager or Guiness Blonde American Lager salt and pepper to taste Combine chopped onion, garlic, bell pepper and oil in large pan, add cumin, chili powder and simmer until soft. Put in crock pot when done. Add beans, tomatoes, paste, jalapeno, diced chilis and beer. Brown deer meat in pan used for veggies, salt and pepper to taste.. Add to crock pot, cook on medium for 8 hours. Serve with some shredded Tillamook atop chili.

I don't have any venison, so I used ground beef instead. Going to do the taste test later today.

Turned out pretty dang tasty. Next time I'll go half the tomato paste and up the green pepper and onion. I make a very similar chili recipe, but put a variety of peppers into it. IMO, it adds subtle differences to the pepper flavors. Try adding a fresh Pasilla, a Serrano and an Anaheim to go with the green pepper and the jalapeno. And I'd try it with tomato sauce instead of paste. I also make it on a stovetop and simmer about 2 hours. I haven't done it with the beer though. THAT'S NEXT UP FOR ME!!

I think I should've added a cup of chicken stock too. It turned out just a skosh on the thick side. 10-4 on the peppers, good call.

Started a crockpot of chili this morning. High today to be 34 degrees. Down to 19 tonight. I use tomato sauce rather than paste, and I added in some tomatoes I had frozen from the garden this summer. The Vidalia onion is a nice touch, but I chop mine up and sprinkle it on the chili, then sprinkle some cheddar cheese on top. And for a little extra zest, use some grated pepperjack cheese instead of cheddar.

It came out pretty damn good, but I re-checked the recipe here and realized I had forgotten about BEER !! DAMMIT!! Now I have to make it all over again, after I finish this batch. Also, I saw in a cookbook a substitution of peanut oil for vegetable oil which I had never seen before in Tex-Mex cooking. It made a huge positive difference, I thought. Again....you need to lose the canned chilis and chop up a large variety of fresh; serranos, anaheims and jalapeno at the very least. I used fresh romas instead of canned, and had about half a tin of those grape tomatoes that TJs sells and that went in toward the end as well. They stayed intact, so you get this nice blast of tomato when you bite into it out of the bowl. Last, I saw a recipe that added ground coriander as well, which I do a lot in Indian cooking. I think that helped it as well.
