Marinated some chicken breasts in Italian dressing overnight. Put them in the smoker this morning and cooked them slowly over some mesquite from Texas. Chunked up some tomatoes, cucumbers, and onions and put them in the fridge in a bowl with some vinegar and water to chill. Cooked some macaroni noodles and added some shredded garlic and butter. Chopped the chicken and added it to the macaroni. Made a pitcher of sweet iced tea.

My wife and I were vacationing in Nag's Head, North Carolina some years ago, and we stopped at a popular restaurant on Roanoke Island that served grilled tuna steaks marinated in Italian dressing. They were awesome. I think I'll try your grilled chicken/Italian dressing idea this summer.
The marinade that I use most often in the summer (for grilled chicken, beef, or lamb) is a Greek style marinade of olive oil, minced garlic and chopped mint. (Mint is one of the few things that will grow wild here in Denver's clay soil.)
