I've been paying around with bacon lately. My goal is easy bacon, no mess, minimize the grease, maximize the crunch. Here you go; Take one pound of bacon. (This recipe has times for thin bacon. If you like thick bacon you'll have to increase the first cooking time.) Lay out slices in a single layer on a baking sheet that has been lined with a layer of parchment paper on top of a layer of foil. Bake at 350 for 25 minutes. Remove from oven, turn heat up to 425. Flip bacon slices over. Finish in oven for about 5 minutes at 425 until lightly browned. Immediately remove from oven and place the strips on a cooling rack over foil. DO NOT drain it on a paper towel or directly on the foil, as this will cause the bacon to steam itself and it won't be as crisp. When the bacon is cooled a bit it will be really crispy. Allow the paper/foil to fully cool and you can just roll up the mess and throw it away. For a change, if you want to add some flavor to your bacon, before baking it sprinkle it with smoked salt, Old Bay crab boil or Tony Chahere's Cajun Seasoning.

I'm sorry....I don't get it. How does this maximize the fat in the final product? You must have misread....it maximizes the CRUNCH. It actually renders out a bit less fat than traditional frying does though. However, when I do it this way I get really crispy bacon. Thicker varieties will have a more substantial crunch. More importantly, I don't have to watch it constantly....put it into the oven and put on a timer and do something else. And cleanup is FAST!

While the overall time is longer, you actually have to pay much less attention during the process, you're less likely to have the bacon irregularly cooked, and cleanup is extremely easy. Overall it's worthwhile.

I like the idea of not smoking up the house. Although when I'm not so sure I want to take 30 minutes to cook breakfast when I have to get out the door for work. But I will give it a shot on a rainy day,,, I'll stick to cooking it on the grill outside on sunny days. Love to bug the neighbors with the smell of bacon in the morning. I'm bad that way.. teehee. Might even try it with cinnamon chocolate..
