Grilled some chicken breasts marinated in Italian Dressing. Cut up chicken into small chunks. Added two chopped boiled eggs. Chopped up some sweet gherkins. Chopped up a Granny Smith apple. Mixed all together with a few scoops of Duke's Mayo. Put it on some whole wheat bread. The Granny Smith apple added a nice tartness to the sweet gherkins. I used the gherkins because I had no sweet pickle relish. When I make tuna salad I use dill pickle relish and a sweet Fuji apple. Nice balance of sweet/tart.

I make tuna salad with nothing but tuna, mayo, dijon mustard, and dill. I use a generous amount of dijon & mayo. It goes well on rye or sourdough bread with a slice of melted Swiss cheese. Probably my favorite quick sandwich.

I make tuna salad with nothing but tuna, mayo, dijon mustard, and dill. I use a generous amount of dijon & mayo. It goes well on rye or sourdough bread with a slice of melted Swiss cheese. Probably my favorite quick sandwich. Agree. Now get in the kitchen and make me one..... sweetie. Just add apples & V onions.
