CHILI TIME!!!!!!!!

Well, it's finally fall here in the sunny South. Going down into the 30s at night and up to the 60s and 70s in the day. Making a big pot of chili today, enough to put a dozen quarts in the freezer and enough in the fridge to have for 3 or 4 nights over the next couple of weeks. Cut up and cooked about 4 pounds of venison roast to start, then added some ground chili peppers, ground cayenne peppers, salt, garlic, chopped onion, paprika, cumin, and 1/2 tsp of Texas Pete.
In the crock pot for 8 hours and it'll be ready tonight for a tasting of a couple of bowls full, with a cold beer or three to wash it down.
Gluten free.


PS Also included are some frozen tomatoes for the garden this summer.

I have an eight quart crock pot. First pot was done about an hour ago. Transferred to a large soup pot to cool. Second crock pot cooking now.
Just finished a bowl and it's super good. Going for second bowl as I watch the USC, v UDub (see, I remembered) game tonight.
If I could find a 16 quart crock pot I'd buy it.

Find an old 18 qt roaster oven or buy new one. Back in the days when I was cooking for my two boys and all of their friends constantly hanging around, I used an old Nesco my mom had and it worked well.

I have a big Oster. I can cook a 20 lb turkey in it with no problem. My crock pot is a Hamilton Beach. I like it for soups and chili because I can set it on high for a few hours, then turn it to low for the rest of the day and not have to worry about it burning on the bottom of the pot. I think chili and soups are best when they cook for a long while.
My soup pot holds about 12 quarts. I don't use it much but My Sweetheart likes it better than the crock pot.

<Shrug> It was just an idea. I never had a problem w burnt bottom as it had a temp control down to warm. I forget what the crock temps are but you can get them,as I recall.

We have that damp cold here that you just get warm enough outside. Going down to 23 tonight and only up to about 36 tomorrow. Thank goodness no rain coming. Just had 2 bowls of my chili with some Monterey Jack cheese chunks and a few Fritos on top.

I cook my Thanksgiving turkey in a roaster like this every year. Cooks a perfect turkey and frees up my oven for the rest of the dinner.

Yep. That's what I cook turkeys in. I also will put in a big Boston Butt, with some potatoes, carrots, and onions.

Great idea! I'm doing a roast lamb today. This could work nicely, because I also want to make Christmas cookies.
