Pretty simple.(this is a large recipe, so portion as you need).
One large red onion finely diced. 20 potatoes, boiled and then chopped. 6 to 8 hard boiled eggs, roughly chopped. A full pound of bacon, fried and then roughly chopped. A bottle of italian dressing...if you want it really good, (which is to say, really bad for you) use bacon drippings, salt, pepper and vinegar instead. I don't do that anymore... Mix all that up and refrigerate for 4 hours or more. Just before serving, add 3-4 tablespn of mayonnaise and juice of one lemon.
toss and serve.

I haven't done it, but omission of the mayo at the end shouldn't be a big deal. I like the mayo and lemon juice at serving. Gives it some fresh moisture and tang. I usually quarter that recipe for non-party times. Still works well. My mom always cut off the potato skins as well, but I prefer leaving them on. Your choice. I've also varied the potato from standard Russet to reds to Yukons. They all add some difference, but all work.

Hoping to get the wife to make this today. I'll do some some smoked boneless chicken thighs. My mom's recipe is more traditional but nothing like that crap you get at delis or in a tub at Costco.

YAY!! Wifey making a 1/3 batch. Using Kozlowski Farms 'old world Italian zesty herb' dressing, a local organic (pretty famous) producer of all things yummy. Doesn't contain oil but says if you like you can add extra virgin olive oil to it (which I did). Using applewood smoked uncured bacon. ETA: chilling now and just started the smoker. Can't wait to try your mom's recipe, Walt!

optional: 1 tbsp French's™ mustard
Don't overmix.
Pretty basic. The secret ingredient is the Miracle Whip™. Don't use regular mayo.

I would add celery to yours next time and maybe try the mustard and see how that turns out. The crunchiness of the celery is good counterpoint to the non-crunch of the taters and eggs. My mom would always make hers the night before too. Then we'd take it and the fried chicken she made the night before and spend the day in the park picnic style. Lots of fond memories picnicing in Chicagoland parks and at the zoo.
