Yeah..it's almost better the second day. My mom used to make it the night before for say, a 4th of July holiday or something like that. I'm going to try your mom's just to get the taste down...then maybe we should start tinkering with the two. They aren't terribly dissimilar. Change one to miracle whip at the end, add bacon to the other. We might come up with true potato salad greatness by messing a little with each. I would add celery to yours next time and maybe try the mustard and see how that turns out. The crunchiness of the celery is good counterpoint to the non-crunch of the taters and eggs. My mom would always make hers the night before too. Then we'd take it and the fried chicken she made the night before and spend the day in the park picnic style. Lots of fond memories picnicing in Chicagoland parks and at the zoo. Now that you mention it, I think ours may have had celery originally as well, but we kids didn't like it...(you know how kids are.. "Mom...why do you put that stuff in that makes the "icky" crunch? I hate that!") So it's possible the celery just slowly disappeared out of the recipe. I'll have to ask my sister and see if she remembers.

POTATO SALAD REPORT. It's early, and I have just put the PSalad down for the night, but preliminary tastings put Fred's mom's PSalad in the upper echelons of PSalad greatness. I'm expecting even better things after it festers. Haven't added mustard yet, but Im thinkin I will in the morning. FTR... Fred's mom is the bomb.

My mother made delicious mustard potato salad. I haven't found the recipe, but I remember she used some boiled eggs, mayo, red onion, a little sweet pickle, and a little paprika. She put the potato salad in the freezer for just a few minutes and garnished the salad with radish roses that she had carved and then soaked in ice water so they would open. They really looked like roses! It was good for the 4th of July to accompany barbecue ribs. 4th of July dessert was chocolate cake and homemade red, white, and blue peppermint ice cream.

Don't forget, the mustard is optional and my mom usually didn't add it. Maybe split the batch in two and add mustard to one for comparison purposes. Wifey is making Walter mom's recipe this very minute. She's adding small diced celery this time. Also, gonna try a bowlful with some minced fresh jalapeno mixed in and see what that tastes like Got real brats and REAL sauerkraut (important!) from TJ's, cleaned up the grill real good yesterday... The 4th of July BBQ, it's on baby! FTR... Our mom's ruled, and I consider these recipes a straight up tie for best ever!
