This guy is really a hoot. He reminds me of a few Italian Restaurant clients I've had over the years. His recipes are relatively simple, which I like, and so far, I've made about 3 or 4 of them and they've all been pretty good.
Tonight, I'm trying this scallop linguine.

Okay. With a little variation because I could not find jumbo scallops, I ended up with smaller bay scallops. That changed the look of the dish, but not the taste.
Scallops, garlic, olive oil, butter, white wine, fresh tomatoes and salt and pepper over lingiune? How can you go wrong? It was fantastic! Y'all need to try it.
