...Now, What's for dinner?
Since I've been on the road all week my folks insisted on giving me a break from the kitchen and are doing Christmas dinner at their house. Roast Prime Rib of Beef, twice-baked potatoes, Waldorf salad, various pickled vegetables (well, I did pickle those...) and an orange pie. Oh yeah...a nice glass of "Gerstacker Gluhwein" (which is a spiced sweet red wine served warm.)
What is everyone else serving?

Turkey in the roaster, smoked ham, sweet potato pie, mashed taters, lima beans, green bean casserole, asparagus casserole, corn on the cob, 4 or 5 desserts, sweet tea, and about 15 family members and friends. Yesterday our local Community Watch group delivered 25 Christms dinners and presents to needy families in our area.

For some reason I am having issues with my Photo bucket not posting pics. I'll figure it out eventually. Anyhow, I made Homemade eggnog for the first time and I believe that is the ONLY way to have that from now on. Christmas is always exhausting, but always delicious! This year for Dinner I made the Roasted Crispy Blackened Duck which I slow baked for 4 hours and then basted the last 1/2 hour with an orange, coriander and garlic reduction with just a little bit of duck fat, agave and balsamic. Than I made an Crancherryorange glaze with just a bit of rosemary and garlic. And a bit of cornstarch was added to help it thicken and it worked beautifully by letting it simmer slowly on the woodstove all afternoon. I will be busy writing down what I did, as I usually take 3 or 4 recipes and combine them to make my own creations. It can cause a problem if I have to make it twice. -----oh back to dinner. For the two sides, I made a wild mushroom and freshly roasted chestnut Risotto as one dish and simple baby peas or the second. Desert was chocolate crinkle cookies and chocolate chip cookies. I made fresh white bread. No box mixes in this house. We had some of the bread toasted with our breakfast this morning. Looks like I am going to be eating rabbit food for a week to make up for all this good stuff!! Too cold to go running.

I'm on a mostly liquid diet so far today-- egg nog with nutmeg and brandy. May have to sit down and eat some grilled salmon with horseradish, sauteed bok choy, and rice before too long.

Ohhh Yes, I did make it, oops forgot to mention it. I was lucky enough to have a lavender plant among my herbs growing in the house, so I made a fresh herb de Provence. Very nice. I loved it!! And I saved the melted duck fat. The Duck was devoured!! Thanks for the help ![:)](//storage.proboards.com/forum/images/smiley/smiley.png)

First had prime rib, the second turkey. The big surprise addition this year from the normal turkey fix-uns was brussel sprouts in some sorta balsamic vinegrette reduction that was just excellent, and I usually hate brussel sprouts.
