Looking good there. I prefer a hot smoke on whole chickens set up on half-empty beer cans..... so called "dancing chicken".

Here's the thing for me. Chicken skin can get pretty tough when it's smoked from a raw state. That's why some recipes call for steaming the wings before further treatment. It's not much fun to have to really bite down on the wings to tear through the tough outer skin. This is why I wouldn't smoke wings. If I want bbq wings my favorite treatment is to lightly flour the wings an deep fry them, then thoroughly baste with bbq sauce and finish on the grill. My best friend admits that the primary reason why he hung around me in college was for my "barbecued fried chicken".

Here's the thing for me. Chicken skin can get pretty tough when it's smoked from a raw state. For people like me who have strong teeth and like the added texture, an extra step like steaming etc. is pretty rediculous especially considering most people down south here don't even steam iron their clothes ....But thanks for the tip anyway....
