7 hours. Unfortunately I have a cheap smoker (brinkman deluxe) and the temp only says low -ideal-hot. cooked at ideal for 6 hours and hot for the remaining hour till probe said 175. Used mesquite smoking chips and charcol. Brined in 8 ozs jose gold, 16 ozs margarita mix, 24 ozs apple juice12 ozs orange juice 1 1/2 tbs sea salt and 2 tbs st. remy rub(basil, savory, marjoram, rosemary,fennel seed and lavender) brine for 12 hours pat dry, rub with EVO and light dusting with lawrys season salt.

Saving for one of the stand up smokers .

Turkey turned out pretty good. Used a little too much mesquite though as it over powered the taste of the brine a little. Dark meat had more of the brine flavor than the white meat. All in all mighty tasty . Smoked turkey sandwhiches on sourdough tomorrow.
