I've been searching for a recipe for broccoli casserole for Thanksgiving dinner but haven't seen one I really likes. So I've decided to just make one similar to how I do my asparagus casserole. I'll let you all know tomorrow how it turns out. We've met some new folks in the area that can't get together with their families this holiday season so we invited them to come here for Thanksgiving dinner. They're from California so I told them to bring their own tofu and chickpeas.

They're from California so I told them to bring their own tofu and chickpeas. My broccoli casserole turned out great. I steamed the broccoli, layered a pyrex dish with saltine cracker crumbs, a layer of cream of mushroom soup, broccoli, and cheddar cheese. Then another layer of crumbs, soup, and cheese. Baked for 5-10 minutes to melt the cheese, and served. I use the juice from the steamer to thin the mushroom soup and sprinkled some on the cracker crumbs to soften them. I do the same when I make my asparagus casserole. One recipe I saw used Ritz Cracker crumbs. I may try that at Christmas dinner. Our new California friends liked everything. They had never had cornbread dressing before, but they ate three helpings.
