Debbie's back is still hurting so I did dinner again tonight....Swiss Steak and Mashed Potatoes with Parsley Carrots. Starting with the Swiss Steak, I got my pressure cooker out, dropped 3-4 Tbspns bacon drippings in it and warmed it to get it ready. Then I got out some 1'x2" pieces of Angus beef Chuck, put them on a cutting board with flour salt and pepper and beat them until 1/4" thick. Browned them a few at a time in my pan, then set them aside. I poured a 15oz can of diced tomatoes into the pan, then put the steak back in a stirred it around a bit. I closed my pressure cooker and set it to 15Lbs, then turned up the hit a little. Then I got out a potato blend...some purple, some redskin, some white, chopped and boiled them. Then after draining I mixed in butter, salt, pepper, parsley and milk.

I also cooked some carrots, seasoned with butter, salt, pepper and parsley. When the meat was done I took it off the stove, cooled it under running water, opened it and removed the meat. then I added beef base concentrate, flour and water to make gravy....and got this.....Fork-tender beef with a rich gravy, warm and tasty mashed potatoes and buttery carrots. Sorry '61.....can't buy this at the Walmart "canned food" bar!

Thanks guys. Believe it or not, those steaks, which are about 2" wide and 4" long each started out as a roughly 1.5" by 1" piece of stew beef. Really, the pressure cooker does such a great job that you don't even need to use a high-quality piece of meat if you properly pound it down to 1/4" thickness or less. Debbie & Vivian complained that I didn't make enough for leftovers.

I have a several pkges of "cube" tenderized and flattened elk that I need to try something else with. Everything so far that I've tried, my bride has nixed. Its pretty tough, I guess, for her.
