Well, I caught about 30-35 crappie today, and released most of them. I kept 8 nice ones and brought them home.
Filleted them, washed them, sliced some taters, lightly brushed them with extra virgin olive oil, dribbled some melted butter (churned by a friend last week) over them, sprinkled them with a Cajun blend, a couple of sliced onions, and put them in the oven and cooked until nicely browned.
A pot of pinto beans cooking on the stove.
I mixed up some general purpose flour, salt and pepper, and some Mrs. Dash onion and herb mix.
Beat 2 eggs in a bowl and thin with buttermilk, dip a piece of fillet, roll in the flour mix, dip in the milk & egg again, roll in the flour again, and lay it in a cast iron skillet with 1/2" of hot pure vegetable oil. Repeat with each piece of fish.
Turn fish after 2 1/2 minutes and leave in oil about another 2 minutes or until coating is golden brown.
Take from oil and lay on paper towels for a minute to soak out excess oil, then flip it over for a minute.
I buy potato rolls at a local bakery. A piece of fillet, tartar sauce, and maybe a slice of hoop cheese if you're bold. Add a slice of onion (Vidalias when in season) if you wish.

One of my many bands was "The Crappies". I loved that name.
I always pronounced it crappy too but I grew up in the midwest and we pronounce everything with a nasally aaa. I can't stand CA accents with a's pronounced as a soft "a". Like ahvacahdo, doood.  I intentionally use hard a's all the time to compensate. |

Sounds great........ I love crappie. Up here we sometimes get them in the tidal Potomac tributaries where just a touch of salt in the water helps them grow pretty large. Debbie and I used to catch them in the 15"-18" range, and they get nice and fat. I prefer to fillet & fry them, myself.
