Bacon! Beautiful Bacon! It might just be the Western world's favorite food. Vegetarians often say that if they were to violate their dietary rules it would be for bacon. The lowly pig's belly, pickled, smoked, dried, sliced and then fried produces that wonderful super-food Bacon! Man could live happily off of a loaf of bread, a few condiments and some Bacon! It comes smoked and unsmoked, with rind and without. Sliced thin for delicate crispness or thickly for a manly crunch. It's served on it's own. but elevates other foods to new heights. A filet mignon is a steak, but if you wrap it in bacon it becomes a delicacy. Scallops are a sought after seafood, but wrap them in bacon and people will fight to be first in line for them. Clam chowder? Just shellfish soup until you add the bacon. Oysters on the halfshell? Add spinach and bacon and they become Rockefeller. Bacon, beautiful bacon.
My favorite bacon is cured and hickory smoked, although I've also had oak-smoked, (corn) cob-smoked, applewood-smoked and others. I prefer getting mine in 10 or 15 Lb boxes from the restaurant supply so that it doesn't come water-injected like the stuff you get in grocery stores. Here in the mid-Atlantic the Amish produce my favorite bacon, although "Excel" food service bacon is sliced thinner than any other I've had resulting in great crispy slices of salty, smoky goodness. In my house we consume about a pound a week of the stuff.
