OK, so I admit it.....My last batch of Beef Jerky LOOKED fine but in reality, it came up a little short in the flavor dept. (which iz why i didn't send any to Fred).....He kalls my food crap, the guitar I bought him crap, the songs I write crap so I said f-word it,,,He don't get none....(With friends like that, who needs....you know the rest) The primary reason for the not-quite awesome flavor of the last batch was because I just used TERRY-YAH-KEE sauce and a few other things and didn't use the original AWESOME recipe from FoodNetwork that includes Honey, Crushed red pepper and a few neeto other ingrediants.......SOOOOOOOO, here I am using 3 POUNDS of MEGA-lean London Broil that has marinated for 18 hours !!!!! This is a 4 filter (total) event !!!!! YES !!!! I put the package in the window at exactly 9:30am this morning.....It will be perfection right around midnight tonight .....Just in time for my Birthday

LOL....Also, THIS time, I told the girl at the market (who sliced it last time and remembered me) to slice it JUUUUUUST a hair under an 1/8" inch but not TOOOOO thin .....I think she nailed it ....Of course I tipped her ......Not cheap like Freddy iz .....

I checked the jerky (and swapped the bottom and middle filters for even dehydration) at 3:30 pm here (1/2 way point) and look/ smell is absolutely spot-on .....Lookin like winner, winner chicken dinner here folx .....YES !!!!!! Fotos WAAAAY later tonight when its done.....Should be around midnite EST Side note: Clip the bungie cords together on the BACK (inlet) side of the box fan so you have just flat bungie strap on the front (outlet) side of the filters....It's alot more user friendly this way and doesn't try to collapse the filter sides as much .....FYI

I use shorter bungee cords and clip them to the sides of the fan in the back.

12 hours (on the nose) and the Jerky came out PERFECT !!!! The flavor is FULL and the black pepper is prominent The thickness is about right and the texture is great CANT stop eating it !!!! I FILLED a gallon size ziplock The recipe from FoodNetwork is definatly excellent Fred is gonna like this

I brought the zip-loc bag of jerky to college today and handed out some to a few class bros.....The response was OVERWHELMING !!!!! .....The flavor of this recipe is HUUUUUGE !!!!! Sent Fred out a package of goodies today.....we'll see what he has to say...probably won't be nice

VERY nice, Freddy but THIS JUST IN !!!!I told the girl at the slicer thingy that i got a complaint about the thickness (Thanx Fred) SOOOOOOO we need to kick this batch back out to an 1/8" .....she sliced it and I think this might be the coveted setting .....Se said it was "2.5" on the slicer....I'm assuming that means mm.....Looks to be 1/8" 2 me ......Gonna let it marinate all night and start it in the box fan temari morning 8am ....Side note: I think I got the flavoring dialed in this last time so this time I added a bit more crushed red pepper and an added blast of hot sauce to bring a bit more heat This MAY BE my finest work yet !!!! STAY TUNED !!!!!
