TJs used to sell spelt and we really liked it. On the box it said that it was the stuff the Roman legions ate while conquering the, er....unspeltified. We prepped it like rice or barley, used it as a side dish and in soups. I have no idea what flour of the stuff would taste like though but I'm guessing it's just a wilder cousin of wheat.

From what little I read it is a wheat cousin. Sorta likea euro trash cousin. It was used mostly by europeans in the middle ages. Supposed to be water soluble flour that aids in digestion of the vitamins in the wheat. Says some people use it to make beer and in poland they make vodka out of it. So it cant be all bad. ;D
