What a great way to use a shot of your favorite bourbon! Ingredients; 1 cup Light OR Dark Corn Syrup (I prefer light) 3 eggs, separated 1 cup sugar (I prefer unrefined turbinado) 2 tablespoons butter, melted 1 shot of bourbon 1-1/2 cups (6 ounces) walnut pieces 1 2-cup recipe of unbaked pie crust (I've shown you this before.) Preheat oven to 350°F. Mix corn syrup, eggs, sugar, butter and bourbon using a spoon. Stir in nuts Pour filling into pie crust. Bake on center rack of oven for 60 to 70 minutes (see tips for doneness, below). Cool for 2 hours on wire rack before serving. I used mini pies which cooked much faster, cooled in 30 minutes and tasted AWESOME!!!!! RECIPE TIPS: Pie is done when center reaches 200°F. Tap center surface of pie lightly - it should spring back when done. If pie crust is over-browning, cover edges with foil.

That is an understatement of British proportions! Debbie and I split one of those mini-pies and they were, in a word, Incredibelicious!

That is an understatement of British proportions! Debbie and I split one of those mini-pies and they were, in a word, Incredibelicious! But, but, but when do you drink the bourbon???
Looks great. I'm gonna try it.
Then I make BAM's maple pecan pie.
History side note: Pecan is from an Algonquian word, meaning a nut requiring a stone to crack.
I like the mini pie idea. .

I like the mini pie idea. .Well, I pulled a full shot, then realized it was really too much, so I drank it and refilled the glass to get the right amount. ;D Hit Marshalls/TJ Maxx or Homegoods and look for Wilton Non-stick pans like mine. I made 6 pies at once, made a 7th of the leftover filling....gave 3 to my neighbor who's moving and gave my son/daughter-in-law his dining room set for their new home...... He told me he thought it was a fair trade.
