Here's a great way to prepare acorn squash, which are naturally slightly sweet and nutty in flavor. First I split whole acorn squash, remove the seeds and place them face-down in a baking dish with 1/2" of water in it and bake them at 350 until tender....about 45 minutes. I usually do 3 or 4 squash at once. I cool them, scoop out the flesh with a spoon and throw away the tough skins. Then I package the cooled squash in containers and freeze them until I'm ready to prepare this dish. Ingredients; Cooked Acorn Squash Brown Sugar or Turbinado Flour chopped pecans butter 1 egg salt pepper (Pictured here with other meal ingredients) Mix 1/4 cup sugar with 1/4 cup chopped pecans or walnuts and 1 Tbspn of flour and set it aside. I mixed the egg with 1 1/2 cups of squash, 1 Tbspn melted butter, salt and pepper to taste. Then I filled three 4" cocottes about 2/3 full of squash. Divide the dry ingredients among the 3 cocottes and sprinkle over the top of the squash. Then, cut a 1Tbspn square of butter and press it down intot he squash. Bake them in the oven for 35 minutes at 350 until done. Remove from oven and set on a plate to serve.

My wife just splits em scrap em out butter brown sugar and just bakes the hell out of em . Only way i'll eat it is if it taste like pie lol. Your way sounds real good though Rob. When she gets home i'll suggest it.

Nice! I always halve an acorn squash, throw in some chopped garlic and butter, wrap in foil and bake for about 45 minutes. Delicious just plain like that.
