That's not enough beans. Are you using the 12 qt. pot? Then use 3 pounds of beans. Listen, you f-in A hole...YOU sent me the f-in recipe and it calls for ONE lb of Beans(which happens to be one package) ....WTF ? They've swelled up like a muthuh fuckuh in the last hour....BTW

Did you read my posts about tripling the beans, and doubling or tripling everything else except the Herbes DP? Still, I only ended up with about 10 quarts. Jarring up about 5 right now for the freezer.

Did you read my posts about tripling the beans, and doubling or tripling everything else except the Herbes DP? Still, I only ended up with about 10 quarts. Jarring up about 5 right now for the freezer. I been makin this batch with 2 qts of water according to the recipe...are you sayin I need to add more water? So far I'm making it according to the original recipe and it looks like when I add the beans there ain't gonna be much broth left over...

I wanted a big batch as long as I was going to all the trouble and I almost always replace water with homemade or store bought organic chicken broth - sends the flavor through the roof!

Is it better to soak the beans overnight ? Yes or no ? Simple question.... Lee, if you soak the beans overnight, then throw away the water and start with fresh water to boil them in they'll be less "fartastic". Also, you're more likely to properly rehydrate them. Dried beans that don't fully rehydrate are pretty nasty.

Lee, if you soak the beans overnight, then throw away the water and start with fresh water to boil them in they'll be less "fartastic". Also, you're more likely to properly rehydrate them. Dried beans that don't fully rehydrate are pretty nasty. Why I soaked them extra long in two different stages of cold then hot water. They came out buttery smooth and not underdone at all. I got a good mix of whole beans and some that pureed. Not fanfartingtastic at all, just the usual amount you'd expect with a good pot of beans.

I decided to make it tonight so it can set up overnight and I can have it for lunch temari with Texas toast ....Thanx 4 the input (as always, YOU ROCK !! ) ......Jef,,,,Fred doesn't .......

Right now (so far) this recipe is LACKING in overall flavor and rather bland...I followed the recipe to a TEE and even upped the amount of ham hocks.....This train doesn't go to flavortown....I'll add bacon temari and see what happens.... P.S. It's better with tabasco and that's kinda bullshit.....

P.S. It's better with tabasco and that's kinda bullshit..... That's because you didn't use chicken stock, dummy. I used no salt and no tabasco and mine was perfect and AWESOME. The Herbes de Provence really added a perfect flavor but as I said before I went light on them because that stuff is strongly overpowering.
