Lee,
We grill or smoke a lot of salmon around here. I usually marinade ours in a mixture of soy sauce, sesame oil, and dill.
This is very good served with a horse radish/dill sauce...

What are the measurements of your horseradish/dill sauce? Do you add lemon to it? Mayo or do you make your own aoli?

I rarely measure anything when I cook. I mix the horse radish in a little mayo-- in varying ratios depending on how strong the horse radish is-- and sprinkle in some dill. It's great with smoked salmon.

Fred & Flatus cooking dinner for two American foxes... Bill, did you serve the sauce on the side after or did you baste the salmon before you schmoked it ? I serve the horse radish dill sauce on the side. I marinate the salmon filets in a mixture of soy sauce, sesame oil and dill before throwing them on the grill. I don't have a smoker, so I smoke them by putting them on the top rack of the grill, turning the opposite burner on and placing soaked mesquite chips in foil over the flame-- with the lid closed, of course...
