WHOAH BABY !!!!This was kind of a science project "what if" thingy thinger.....I took a couple pretty thick center-cut chops and pounded them a little flatterer and then made some generic stuffing on the stove EXCEPT that I added some chopped (already cooked) andouille sausage and lined the whole mess with thick-sliced pepper bacon !!!! I used hickory chips for smoke and OMG !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!Ona scale of 1 to 10, this f-in THANG iz a FIFTY !! Just short of 1 1/2 hours on the smoker at ~225F and the flavor is KICKIN !!!! Damn. Looks fantastic.

Indeed, it turned out to be a dish of total decadence .....I actually took the bacon strips off, chopped them up and used them in a Cheddar/ potato soup I made....I tell ya what: There are worse ways to die .....P.S. The pork chop itself was VERY tender (as you would expect from smoking at low heat)and the andoulle sausage stuffing was just insane for a box mix .....I gotta stop eatin like this...lol
