We had a fantastic dinner Monday night. Corned beef and cabbage, roasted potatos and carrots. Just to add a bit of Southern flavor, I made pinto beans and cornbread. Chopped up a white onion to sprinkle on top of the pinto beans.

Finishing ours for dinner tonight. I cooked my brisket in beer and beef base with the carrots and 'taters, then pulled all that and finished by cooking the cabbage in that juice. Good E Nuf!

I was in town today and stopped by the bakery and picked up some potato bread hoagie rolls. Slapped some Gulden's spicy mustard and some sauerkraut on them, put on a couple of slices of corned beef, wrapped them in plastic wrap, and zapped them in the microwave for 60 swconds. Then had a cold Genessee's Cream Ale with them on the back deck. Yum Yum.
Got dome folks coming down in a couple of months from New England. They're gonna bring me a couple of cases of Moxie.

Finishing ours for dinner tonight. I cooked my brisket in beer and beef base with the carrots and 'taters, then pulled all that and finished by cooking the cabbage in that juice. Good E Nuf! Tried a version of this with some corned beef the other night. I added a bunch of chopped onion with the carrot and threw in some potato too. Didn't pull anything out at the end, just dumped the cabbage in until it softened a bit an then served it up, with some mustard on the side. One of the things I really like to do with the leftover corned beef is to make sandwiches with it using raisin bread. It's a little weird, but turns out to be a nice combination with the little nuggets of sweetness of the raisin added in.
