Grits are fabulous! After cooking add butter, salt, pepper, and sometimes a dash of tabasco. Fry some breakfast ham and make red-eye gravy or sawmill gravy to make them heavenly.

Any of you guys try fried grits? Make regular grits the day before you want them, spread them out to about 1/2" thick in a greased pan. In the morning cut the now-firm grits into squares about 3" in size, sprinkle both sides with flour and fry them in a pan with a bit of oil in it. (In this case veg oil of some type Works better than butter or bacon drippings.) When crisp on one side flip. When crisp on the other side put it on your plate with some bacon and some REAL maple syrup.
My preference for this dish is yellow corn grits not hominy, since the yellow corn grits have more flavor.

Add some black coffee to the skillet and heat, then pour in a bowl. The red grease will float to the top of the water-based coffee. Thus the "red" eye. Spoon over the grits, or onto an biscuit. Sawmill gravy is red-eye gravy with some flour and water added to make gravy. Add black pepper and salt, of course. The origin for red-eye gravy (according to my late grandma) was the farmer would take some biscuits to the field so he could work through till dinner. If there was a piece of ham left over he would put it in the biscuit. The ham on a biscuit was too dry so some of the grease was spread on the biscuit. Then someone decided some coffee would add more flavor. You understand that "dinner" was the noon meal that consisted of at least 3 meats, 4 or 5 vegetables, and 2 or more desserts. Then off to the fields until sundown and a light supper (usually leftovers from dinner) before bed. Walter, you really need to come for breakfast some time.

Crumbled bacon would make it better too. Bacon makes everything better, Fred. My wife just found a new treat to make up, Saw it on some cooking show. You take a club cracker, put either a tablespoon of parmesan cheese or a table spoon of brown sugar on the cracker. Then you take a strip of thick cut bacon, cut the strip in half, and wrap each cracker with one half strip of the bacon. She made about twenty of them up and baked them on a cookie sheet for two hours at like 225 or 250 degrees. Oh my God were they good. Most of the family liked the brown sugar ones better, but I was kind of partial to the cheese ones. She had to make another batch right away and used up all the bacon in the house. If you have never cooked bacon in the oven, she puts it in strips on a cookie sheet and sprinkles brown sugar on top of the bacon and bakes it until crisp and it makes the best bacon ever.

Take a biscuit, stick your thumb in it and hollow out a small space, then pour syrup (surp for the poor country kids) annd then fold the biscuit up to seal the hole. Wrap it in paper and put it in your pocket. Later at school lunchtime, there's your lunch.
