I shall smoke a tri-tip tomorrow and surround it with wings. I'm shall coat the tri-tip with bacon grease and rub and see how that works out.

Your wings look like they're still wet. Dry them thoroughly with a paper towel and they'll brown and crisp better. Better still, after you dry them shake them in a bag with spiced flour in it. Only a tiny bit of flour will actually stick, but it's worth it. You won't have a "crunchy" exterior, but it will be crispy and tasty....and will hold your hot sauce better when you put that on.

I shall repeat wings from last night but this time I shall do the seasoned flour thingy and deep fry instead of bake ......I'll try to snap a few pics ....I decided to bake them again but I DID use the seasoned-flour coating and they came out great ....Thanx again for the tip

Black pepper, Cayenne pepper, onion powder, garlic powder in the flour.....nope, no finished pics...Just baked 'em 350F for 50 minutes and then used the 2 dipping sauces i had last night (fresh, of course) ....I had a messy face and hands .....I loved it ....and yes, you were right....nice thin crispy texture.....Nice
